Cheesy Beer Sausage Soup

If the winter chills have begun, then this is one soup you will completely enjoy.

Cook: 6 hours

Ingredients:-

Beef smoked sausage (chopped) – 14 oz.

Beer – 12 oz.

Beef stock – 32 oz.

Carrot (chopped) – 1 cup

Celery (chopped) – 1 cup

Garlic cloves (minced) – 4

Onion (diced) – 1

Red pepper flakes – 1 teaspoon

Sea salt – 1 teaspoon

Black pepper – ½ teaspoon

Heavy cream – 1 cup

Cream cheese – 8 oz.

Sharp Cheddar cheese (shredded) – 2 cups

Directions:-

  1. Combine all the ingredients in a slow cooker except the cheese and cream.
  2. Cook covered for 4 hours on low.
  3. Whisk in the cream and cheese and cook for another 2 hours covered.
