Cheesy Tomato Chicken

This cheesy tomato chicken makes a healthy chicken side dish.

Frozen chicken breast (boneless) – 2 lbs.

Tomatoes (diced) – 1 ½ cups

Salsa – 16 oz.

Cream cheese – 8 oz.


  1. Place the chicken, tomatoes and salsa in a slow cooker.
  2. Cook for 4-5 hours on high.
  3. Add the cream cheese and cook for another 30 minutes.
  4. Stir mix the chicken.
  5. Serve on cauliflower rice.
