Creamed Green Soup Recipe



This creamy green soup is simple yet versatile. It is super easy, delicious and loaded with hearty and fibre-rich vegetables!

Ingredients

2 cups spinach leaves

1 medium-sized avocado

½ cup sliced cucumber

1 green onion, sliced

½ cup red bell pepper, stemmed and sliced

¼ cup vegetable broth

1 teaspoon minced garlic

1 tablespoon soy sauce

1 tablespoon lemon juice

1/8 teaspoon red chili powder

¼ teaspoon ground black pepper

Directions

  1. In a blender place all the ingredients and pulse at high speed for 5 minutes or until blended.
  2. Divide soup evenly among serving bowls and serve.
