Creamy Spinach Curry Recipe

A very healthy and nutritious curry that you can serve over cauliflower rice.

Makes: 8 servings

Cook: 3-4 hours

Ingredients:-

Frozen spinach (thawed) – 3 (10 oz.) packages

Onion (chopped) – 1

Garlic cloves (minced) – 4

Curry powder – 2 tablespoons

Butter (melted) – 2 tablespoons

Vegetable stock – ½ cup

Heavy cream – ¼ cup

Lemon juice – 1 teaspoon

Directions:-

  1. Dump all ingredients in a crock pot except the cream and lemon juice.
  2. Cook covered for 3-4 hours on low.
  3. Mix in the lemon juice and cream, 30 minutes prior to the completion of cook time and cook covered.

Nutrition Information per serving: 91 cal, 6 g total fat, 18 mg chol, 3 g net carb., 4 g fiber, 4 g protein.
