Hot Sausage & Sweet Potato Soup Recipe

This hot sausage and sweet potato soup have a very savoury taste.

Ingredients:-

Hot Italian sausage (casings discarded) – 1 lb.

Onion (diced) – 1

Olive oil – 2 tablespoons

Sweet potato (cubed) – 1 lb.

Garlic (minced) – 2 tablespoon

Cremini mushrooms (quartered) – 6 oz.

Chicken stock – 6 cups

Fresh baby spinach leaves – 6 oz.

Black pepper – 1 teaspoon

Garlic salt – 1 tablespoon

Directions:-

  1. Heat oil in a pan and sauté the onions and garlic in it.
  2. Add the sausage and cook until browned.
  3. Transfer into a slow cooker and mix in the rest of the ingredients except the spinach.
  4. Cook covered for 6 hours on low.
  5. Mix in the spinach and cook for another 30 minutes.
