Italian Sausage & Lentil Soup Recipe

This soup makes a satisfying meal.

Ingredients:-

Italian sausage – 1 ½ lbs.

Butter – 2 tablespoon

Olive oil – 2 tablespoon

Chicken stock – 5 cups

Lentils (rinsed) – 1 ½ cups

Spinach – 1 cup

Carrots (diced) – ½ cup

Garlic cloves (minced) – 4

Leek (cleaned, trimmed) – 1

Celery rib (diced) – 1

Heavy cream – 1 cup

Parmesan cheese (shredded) – ½ cup

Dijon mustard – 2 tablespoon

Red wine vinegar – 2 tablespoon

Sea salt and black pepper – to taste

Directions:-

  1. Place the lentils and stock in the slow cooker.
  2. Heat butter and olive oil in a saucepan and brown the sausage in it.
  3. Transfer the sausage into the slow cooker and sauté the carrots, onions, spinach, leek, garlic, salt, pepper and celery in the drippings left behind for 10 minutes.
  4. Transfer the mixture into the slow cooker with the rest of the ingredients.
  5. Cook for 6-8 hours on low.
