Lemon Cake Recipe





This lemon cake is a treat whether served warm or cold.

Makes: 8 servings

Cook: 3 hours

Ingredients:-

Almond flour – 1 ½ cups

Coconut flour – ½ cup

Swerve – 6 tablespoon

Baking powder – 2 teaspoons

Xanthan gum – ½ teaspoon

Butter (melted) – ½ cup

Whipping cream – ½ cup

Lemon juice – of 2 lemons

Lemon zest – of 2 lemons

Eggs – 2

Topping:

Swerve – 3 tablespoon

Boiling water – ½ cup

Butter (melted) – 2 tablespoon

Lemon juice – 2 tablespoon

Directions:-

  1. Mix together the dry cake ingredients in one bowl and the wet ingredients in another bowl, leaving aside the topping ingredients.
  2. Mix together the dry and wet mix until combined well and transfer into a slow cooker lined with aluminum foil.
  3. For the topping, mix together all the topping ingredients and spread it over the batter in the slow cooker.
  4. Cook for 2-3 hours on high, till a toothpick inserted comes out clean.
