Pecan & Maple Fudge Recipe

Make this favourite treat for your hubby on Valentine’s Day.

Makes: 16 servings

Ingredients:-

Butter:

Pecans – 3 cups

Vanilla powder – ½ teaspoon

Cinnamon (ground) – ½ teaspoon

Sugar-free maple extract – 1 teaspoon

Salt – just a pinch

Fudge:

Powdered erythritol – ¼ cup

Coconut oil – ½ cup

Pecans (chopped) – 1 ¼ cup

Pecan halves – 16

Directions:-

  1. Combine all the batter ingredients in a food processor and process until smooth.
  2. Add in the coconut oil and erythritol and pulse again.
  3. Transfer into a pan lined with parchment paper.
  4. Spread with a spatula and mix in the chopped pecans.
  5. Sprinkle the pecan halves on top.
  6. Refrigerate for 2 hours till set and then cut into pieces.

Nutrition Information per serving: 247 cal, 26 g total fat (5.4 g sat. fat), 4.2 g carbs, 2.8 g fibre, 2.6 g protein.
