Rainbow Vegetable Noodles Recipe


Rainbow vegetable noodles is a versatile dish, Serve it with your favorite meat breakfast, lunch or dinner.

1 medium-sized zucchini, stemmed and spiral sliced

1 medium summer squash, stemmed and spiral sliced

1 large carrot, peeled and spiral sliced

1 small turnip, peeled and spiral sliced

1 medium-sized red onion, peeled and sliced

3 large garlic cloves, peeled and sliced

1 medium-sized red bell pepper, seeded and sliced

1 medium-sized green bell pepper, seeded and sliced

Salt – 1 teaspoon

Ground black pepper – ½ teaspoon

4 tablespoons bacon fat


  1. Set oven to 400 degrees F temperature and let preheat.
  2. In the meantime, prepare vegetables and place in a large bowl.
  3. Add salt and black pepper and toss until mixed. Then spread vegetables on a large baking sheet and place in the oven.
  4. Bake vegetables for 20 minutes or until cooked through and slightly crispy tossing halfway. Serve straight away.
