Summer Vegetable Platter Recipe

This platter makes a great side dish to an Italian meal.

Makes: 6 servings

Cook: 3 hours

Ingredients:-

Okra (sliced) – 2 cups

Grape tomatoes – 1 cup

Red onion (chunked) – 1 ½ cup

Yellow bell pepper (sliced) – 2 cups

Zucchini (sliced) – 2 ½ cups

Mushrooms (sliced) – 1 cup

Balsamic vinegar – ½ cup

Olive oil – ½ cup

Fresh basil (chopped) – 2 tablespoons

Fresh thyme (chopped) – 1 tablespoon

Directions:-

  1. Combine all the ingredients in the slow cooker and stir mix.
  2. Cook for 3 hours on high, stirring the mix after every hour.
