Sweet Potato & Bell Pepper Breakfast Casserole Recipe

A very healthy and satisfying breakfast ready once you wake up.

Ingredients:-

Bulk breakfast sausage – ½ lb.

Bacon (chopped) – 6 oz.

Yellow onion (diced) – ½ cup

White sweet potatoes (peeled, shredded) – 1 lb.

Red bell pepper (seeded, diced) – 1

Orange bell pepper (seeded, diced) – 1

Eggs (beaten) – 16

Almond milk – ½ cup

Sea salt – 1 teaspoon

Coconut milk (full-fat) – ¼ cup

Dry mustard – ¾ teaspoon

Cracked bell pepper – ¼ teaspoon

Ghee – for greasing

Directions:-

  1. Cook the onion, bacon and sausage in a skillet for 10-12 minutes.
  2. Grease a slow cooker with ghee and press the sweet potato onto its base.
  3. Spread the onion mix ad bell peppers over.
  4. Whisk together the rest of the ingredients and pour it into the slow cooker.
  5. Cook for 6-8 hours on low.
