Zucchini Bread Recipe

This zucchini bread turns out to be amazingly moist.

Makes: 12 servings

Ingredients:-

Almond flour – 1 cup

Coconut flour – 1/3 cup

Cinnamon – 2 teaspoons

Baking powder – 1 ½ teaspoons

Baking soda – ½ teaspoon

Eggs – 3

Xanthan gum – ½ teaspoon

Coconut oil – 1/3 cup

Sweetener – 1 cup

Vanilla – 2 teaspoons

Zucchini (shredded) – 2 cups

Walnuts (chopped) – ½ cup

Directions:-

  1. Combine all the dry ingredients in one bowl and all the wet ingredients in another.
  2. Add the dry ingredients to the wet and mix in the nuts and zucchini.
  3. Transfer the mixture into a greased bread pan and place the pan in a crockpot with a rack.
  4. Cook for 3 hours on high.
